10 Minute Peanut Soba Noodle Bowl with Roasted Red Peppers and Coriander.

Peanut sauce for 2-3 people
- 2 tablespoons peanut butter
- 7g ginger, minced
- 5 tablespoons soy sauce
- Juice of 1 lemon
- 50g coconut milk
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup
- Water (check wanted consistency and adjust
- Roasted red peppers
- Soba or rice noodles
- Fresh coriander
- Fried tofu
Instructions
- In a mixer, combine the peanut butter, minced ginger, soy sauce, lemon juice, coconut milk, rice vinegar, and maple syrup.
- Mix until well combined.If the sauce is too thick, gradually add water, a tablespoon at a time, until you reach your desired consistency.
- Serve the peanut sauce with noodles, sliced roasted red peppers, crispy tofu and fresh coriander
