10 Minute Peanut Soba Noodle Bowl with Roasted Red Peppers and Coriander.

Ingredients

Peanut sauce for 2-3 people
  • 2 tablespoons peanut butter
  • 7g ginger, minced
  • 5 tablespoons soy sauce
  • Juice of 1 lemon
  • 50g coconut milk
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup
  • Water (check wanted consistency and adjust
  • Roasted red peppers
  • Soba or rice noodles
  • Fresh coriander
  • Fried tofu

Instructions

  1. In a mixer, combine the peanut butter, minced ginger, soy sauce, lemon juice, coconut milk, rice vinegar, and maple syrup.
  2. Mix until well combined.If the sauce is too thick, gradually add water, a tablespoon at a time, until you reach your desired consistency.
  3. Serve the peanut sauce with noodles, sliced roasted red peppers, crispy tofu and fresh coriander
