Raw Walnut Brownies*

I was delighted when Evergreen Healthfoods contacted me to create something festive, easy to prepare and totally delicious using a mix of their wide selection of ingredients. They stock vegan, gluten free, dairy free and Fairtrade foods along with natural food supplements, herbal remedies and natural skincare and in particular their cupboard staples are incredible. This brownie recipe is very quick to prepare, all you need is a good processor and a little bit of patience while it comes together.

What I love about Evergreen Healthfoods is how knowledgeable the staff are so if you’ve a question or query asking them is a great place to start as they are highly trained, experienced and friendly sales advisors. Evergreen put forward more candidates for the Certificates and Diplomas in Health Store Retailing than any other health stores in Ireland or the U.K. so they really know their stuff. Also on Friday’s on their instagram they do a live Q&A which is always interesting!

I really love the texture of these. They’re literally like fudge and so easy to assemble. Adding in the cinnamon and nutmeg makes them feel a little more Christmassy but really they should be enjoyed anytime !


Ingredients

  • 220g Walnuts

  • 150g Almonds

  • 440g Pitted medjool Dates - if these are dry pour boiling water over them for 10 minutes and drain before blending to soften them.

  • 90g of Cacao powder

  • 1/2 teaspoon of nutmeg

  • 1/2 teaspoon cinnamon

  • 1 teaspoon vanilla extract

  • 2 tablespoons of cacao nibs- save some for the topping.

  • A pinch of sea salt

  • 120g toasted Buckwheat grouts - optional but they add a great crunch - save some for the topping.

If you’re using the buckwheat grouts lightly toast them on a dry pan over a medium high heat

agitating the pan regularly to ensure they toast evenly. They will go a little golden after about 5-6 minutes.

Remove from heat and allow to cool.

Simply place all the ingredients into a food processor and blend well.

You may need to scrape down the sides a few times.

If the mixture is not coming together feel free to add in a tiny bit of water from the soaked dates or filter water - a tablespoon at a time.

It will take about 8-10 minutes to come together to form a smooth paste.

Press into a lightly greased 9” tray.

Add a final sprinkle of cacao nibs and buckwheat and place in the fridge to set for 2 hours.

Store in an airtight container in the fridge for up to a week.
