Frontier Foods Flax and Black Olive Crackers with Basil and Tahini Dip*

With the Christmas party season upon us you might be entertaining so I thought I’d share my Flax and Black Olive crackers with Basil and Tahini Dip recipe which is perfect for before dinner nibbles or just enjoying alongside a glass of wine. With the crackers they’re packed full of seeds and have so much gorgeous texture and crunch. If after a day or so they go a little soft, pop them back in the oven for a few minutes to crisp up again. The Green Basil and Tahini Dip is so easy to whip up and absolutely delicious.


  •          120 g flax seeds

  • 85g oats

  • 40 g pumpkin seeds

  •          40 g sunflower seeds

  • 60 g flaked almonds

  • 50 g ground chia seeds

  • 3 tbsp extra-virgin olive oil

  • 1 tbsp fresh rosemary

  •          70 g sliced Frontier Foods Black Olives

  • 1 tsp salt

  •          30g finely sliced shallot -

  • 1/2 tsp smoked paprika

  • 1/4 tsp ground black pepper

  • 360 ml boiling water


INSTRUCTIONS

Preheat your oven to 180*

Put all the ingredients except the Olives and water in the bowl of your food processor. Pulse a few times to break down the ingredients, then add the boiling water and olives. Pulse to form a soft dough and let rest for 5 minutes.

Transfer the dough onto a 13" x 18" baking sheet that's been lined with parchment paper lightly greased with coconut oil. Using your hands spread the dough into a thin even layer, all the way to the edge.

Bake for 20 minutes then remove them from the oven and score along the the mixture cutting the crackers into the size you want and prick them with a fork which ensures they bake evenly.

Return the crackers to the oven and bake for a further 35-40 minutes until crispy.

Allow your crackers to cool completely at room temperature and store in an airtight container for up to a week.

Green Basil Dip

  • 60g Frontier Foods tahini paste
    Handful fresh basil (with stems)
    3 tbsp extra virgin olive oil
    3 tbsp lemon juice or apple cider vinegar
    1/2 tsp maple syrup
    8 tbsp cold water

  • Sea salt and black pepper


Blend all ingredients together until silky smooth.

Add a final drizzle of olive oil and a scattering of basil before serving.
