Pumpkin and Sesame Seed Brittle

Ingredients

  • 100g sesame seeds
  • 50g pumpkin seeds
  • 50g sunflower seeds
  • 60g agave syrup
  • Pinch salt
  • 120g dark chocolate
  • 20 g coconut oil

Instructions

  1. Preheat the oven to 165C and line a baking tray with baking paper.
  2. Stir the sesame, pumpkin and sunflower seeds to a bowl along with the agave syrup and salt and mix well.
  3. Pour the seed mixture to the baking tray and press down to flatten.
  4. Place in the oven to bake for 23-25 minutes until the edges are brown. Let it cool fully.
  5. Melt your chocolate and coconut oil and spread over, finishing with a sprinkle of flaky salt. Break into chunks.
  6. Store in an airtight container in the fridge.
