Roasted tomato hummus on Chickpea pancakes with olives and basil
Ingredients
slow-roasted tomatoes
- 200g cherry tomatoes halved
- drizzle of olive oil
- pinch of sea salt & black pepper
hummus
- 1 x 400g tin chickpeas, drained
- 2-3 cloves roasted garlic, peeled
- 1 lemon, peeled
- 1 teaspoon ground cumin
- 2 tablespoons Frontier Foods tahini
- Pinch seasalt
to serve
- small handful fresh basil and a drizzle of olive oil.
Chickpea Pancake
- 2 finely sliced shallots.
- 100 gram flour
- 130ml almond milk
- 1 teaspoon ground turmeric
- 1 tablespoon of nutritional yeast
- plus more for sprinkling
- 1 teaspoon ground cumin
- ½ lemon, juiced
- 1 tablespoon olive oil
- Pinch seasalt
Instructions

- Preheat oven to 160°C / 140°C fan / 320°F.
- Place the cherry tomatoes on a baking tray, drizzle with olive oil, sprinkle with salt and pepper and toss to coat evenly.
- Bake in the preheated oven for 90 minutes, or until the tomatoes have dried out and shrivelled.
- When the tomatoes have finished roasting set aside.
- To make the hummus. Place the chickpeas, garlic, lemon, ground cumin, tahini and 100ml of water into a food processor. Add ½ of the slow-roasted tomatoes and blitz until smooth and creamy; add salt to taste.
Chickpea Pancake
- Heat some olive oil in a pan over a medium heat.
- Lightly fry the shallots for 6-8 minutes until caramelised.
- Allow to cool then place all of the ingredients - apart from the olive oil - into a bowl and whisk well until a smooth batter forms.
- Once warm, pour in the pancake mixture and leave to cook for 5 minutes.
- Once the mixture has browned on the bottom, flip it over and cook on the other side for 5-8 minutes until cooked through.
- Serve the pancake topped with hummus and some of the remaining slow-roasted tomatoes and scattered with fresh basil.
