Coconut, Banana and Mixed Berry Muffins*

Nothing beats the gorgeous smell of fresh baking and while I was testing these muffins my house literally smelled like heaven. I adore these any time of day. The fruity berry flavour is so delicious but for an extra treat you could also add some vegan chocolate chips. I really hope you love them as much as I do.

Ingredients

  • 220g or 240 ml melted Frontier Foods Coconut Oil

  • 20g chia or ground flax seeds

  • 520g gluten free flour

  • 20g Tapioca starch

  • 150g coconut sugar

  • Large pinch of salt

  • 640 ml of Frontier Foods Coconut Milk

  • 1/2 teaspoon vanilla extract

  • 450g chopped banana

  • 350g berries

Pre-heat the oven to 180*
Line a muffin tray and lightly grease with a little coconut oil.

Combine all batter ingredients except the fruit initially and then stir in the berries and banana. Mash most of the banana but leave about 1/4 pieces in chunks.
Scoop the mixture into the muffin tray and add a little sprinkle of sugar on top of the muffins just before baking for an extra crunch if you like.

Bake for 25-30 minutes until a toothpick comes out without crumbs.
Allow to cool in the pan for 5 minutes to help them set.

Store in an airtight container and consume within 3 days.
