Coconut Oil Treats

Working from home I’m always looking for tasty, yet healthy snacks to tide me over and I wanted to share two options I am loving at the moment. These Apricot and Coconut energy balls are so delicious and with lots of healthy coconut oil and oats they are so satisfying too. They also freeze well so you can make them in bulk . The chocolates are also delicious. I like them quite bitter but feel free to sweeten with a little maple if you like.

Ingredients

  • 100g Almond butter

  • 1 teaspoon vanilla extract

  • 100g dried apricots

  • 120g oats

  • 50g melted Frontier Foods coconut oil

  • 1-2 tablespoons Frontier Foods maple syrup - depending on sweetness required

  • 2-3 tablespoons Desiccated Coconut

Combine all ingredients in a blender until well processed. Scoop out small handfuls of the mixture and roll into balls and roll into the desiccated coconut before placing in the fridge to set for 2-3 hours. Store in airtight container in refrigerator or freezer until ready to enjoy.


Ingredients

  • 1 tablespoon Coconut Oil 

  • 2 tablespoons cacao butter

  • 2 tablespoons cacao powder

  • 1 tablespoon cacao nibs

  • 2 tablespoons of crunchy almond or peanut butter

  • 1 teaspoon vanilla extract. 

  • Optional 1-2 tablespoons of maple syrup depending on desired sweetness. 

  • Pinch of sea salt 

Warm all ingredients together until melted and combined. Taste and add maple to sweeten to your preference. I prefer it without any.

Pour into an ice cube tray and place in the freezer to set for 1 hour.
